Green Curry - แกงเขียวหวาน

The next food is very suitable food with rice, especially thai jasmine rice. It's very hot and spicy but it's full with herb. And you can reduce the chilli. That food is Green Curry or "Gaeng Kĭeow Wăan" in thai word.

Ingredients:
  1. Pork (เนื้อหมู) : Can be changed to be meat or fish.
  2. Coconut Milk (กะทิ)
  3. The component of chilli that made for Green Curry - In thai call "Prik Gaeng": Maybe you can buy in thai or indian store
  4. Vegetable Oil.
  5. Eggplant (มะเขื่อยาว): Slice for 2 Inch.
  6. Fish Sauce
  7. Coconut palm sugar or brown sugar
  8. Kaffir Lime (ใบมะกรูด) : Tear the middle branch off.
  9. Goat pepper (พริกชี้ฟ้า).
  10. Sweet Basil (โหระพา)

How to cook :

  1. Boil Pork with Coconut milk and water until the pork is cooked
  2. Stir-fry the Prik Gaeng with vegetable oil until you get sweat smelling.
  3. Pour the coconut milk and stir it until it blend.
  4. Put the component of Prik Gaeng to the pot of pork and boil it.
  5. put the eggplant in the pot.
  6. Flavour with fish sauce and brown sugar.
  7. Put the Goat Pepper and Sweet Basil in the pot.

Done.

P.S. : Thai Jasmine Rice is recomended but you can eat with the noodle too.
